Clean Up with Kale

A lot of people have new years resolutions. I am not one of those people! But, I am one of those people who really eat like its an Olympic sport from Thanksgiving all the way through New Years Day! I don’t read about or watch the segments on the tv shows that want to tell you how to “stay healthy” during the holidays. PUH-LEASE, I don’t have time for that I am to busy cooking and making things merry and bright!

But afterwards, its back to business! Eating healthy is important, obsessing about it not so much. So now that I have my Christmas tree at the curb (sad face), its time that I curb my eating habits as well. Here is the first of many yummy but on healthier side recipes I will be posting. Happy and Healthy New Year friends!

Sunshine Kale Salad

1 large bunch of kale, washed, de-stemmed and torn into pieces Kale, and Golden Raisin Salad

1/2 cup golden raisins
juice of 1 freshly squeezed lemon (2-3 Tbsp)
1/2 – 1 tsp lemon zest (from lemon above)
1/2 cup finely grated Parmesan
1/4 cup of olive oil


1. Place kale in a bowl and massage it. Yes, you heard me right! Get your hands in there and give a couple of lovely squeezes, rub it together gently. It actually changes it from being bitter and tough to silky and sweet.

2. Then put in the raisins

3. In a small bowl whisk together the the lemon zest, grated parmesan, lemon juice, salt, and pepper.

3. Pour the mixture over the salad and mix together coating the  kale leaves.

    This looks really good! I am a college student and I will be packing my lunch the night before, so I am wondering if this keeps overnight without wilting or becoming mushy.

  • If you want to pack it for lunch just put the dressing in a separate container! 🙂
