4th of July Crostini with Roasted Grapes and Manchego Cheese

This week I am featuring an idea for a “Red, White, and Blue” crostini on the blog. With 4th of July approaching this weekend I thought it would be fun to feature 3 recipes that would be arranged into patriotic colors in honor of this weekend. The “red of the recipes is my Cherry Tomato Bruschetta and the “blue” is Blueberry, Thyme and Brie Crostini. The “white” can be this roasted grape and Manchego cheese crostini. The grapes are juicy and sweet, pairing perfectly with the cheese. These are three amazing bites that are festive and delicious!

4th of July Crostini with Roasted Grapes and Manchego Cheese

The juicy grapes with the manchego are the perfect salty and sweet bite!


ingredients

  • 2 c red grapes, seedless

  • 1 Tbsp olive oil

  • 1 tsp salt

  • 1 tsp black pepper

  • 4 oz manchego cheese, shredded

instructions

  1. Preheat the oven to 450 degrees. Arrange the grapes on a baking sheet in a single layer and drizzle with the olive oil. Sprinkle with the salt and pepper.

  2. Place the grapes in the preheated oven for 15-20 minutes. They should be roasted until the insides are soft and juicy, you will see the skin wrinkle a bit.

  3. Remove from the oven and let it cool to about room temperature.

  4. Top the slices of bread with the grapes then sprinkle the manchego cheese on top. Drizzle with honey and serve.
