One of the first dishes I made myself after giving birth was this simple oatmeal dish. You begin with quick oats and adding a little bit of vanilla creamer to the mix. I am not claiming this is healthy, just comforting. After an emergency c-section, recovery, and baby in the NICU comforting was just what I needed. Along with comforting is keeping things simple. This oatmeal dish is quick, simple, warm, and delicious. The apples caramelize in the brown butter and sugar in mere minutes. The oatmeal is creamy and the apples are decadent.
