Brown Sugar, Apple, and Vanilla Oatmeal

Apples are caramelized in brown sugar and added to warm vanilla laced oats. It is the perfect morning breakfast that warms the insides.

One of the first dishes I made myself after giving birth was this simple oatmeal dish. You begin with quick oats and adding a little bit of vanilla creamer to the mix. I am not claiming this is healthy, just comforting. After an emergency c-section, recovery, and baby in the NICU comforting was just what I needed. Along with comforting is keeping things simple. This oatmeal dish is quick, simple, warm, and delicious. The apples caramelize in the brown butter and sugar in mere minutes. The oatmeal is creamy and the apples are decadent.

I made this recipe on my insta-stories and thought nothing of it. I received a lot of messages asking for the recipe. Hopefully you find the recipe as simply comforting as I did. I find sometimes when I make something that I think is no big deal it makes the biggest impact. Instructions
  1. Cook oats according to package. I use quick oats from Whole Foods. In a medium size sauce pan bring water and salt to a boil. Then add in oats.
  2. Stir in the oats and let boil for about a minute. Turn off the heat, stir in the vanilla creamer, and cover. Let the oats sit while you saute the apples.
  3. In a medium to large saute pan, over medium to low heat brown the butter. Then add the apples to the pan. Gently stir the apples so the butter coats them. Let them saute for five minutes.
  4. After a couple of minutes add the brown sugar and gently stir. Let the apples saute about 5 more minutes. Until you start seeing the apples brown a bit and they become softer.
  5. Spoon the oatmeal into bowls and top with cinnamon and the brown sugar apple mixture. Serve immediately.
