Burrata, Spinach, and Olive Flatbread

This is an easy side dish or snack to put together. It is fancy enough to serve to dinner guests or at a cocktail party. But it is also easy enough to throw in as a side dish to a weeknight meal. I use an already prepared flatbread that I have seen in the supermarkets around me. Hopefully you can find something similar. I have included the link below so you can see what I am talking about.  It is called “Brooklyn Bred,” you can get creative and top it with anything. Superbowl is coming up and this could be a great addition to your lineup!

  1. Preheat the oven to 375 degrees and prepare a large baking sheet ( try to use one with sides) with tin foil covering the bottom of the pan.
  2. Heat 1 tablespoon of olive oil in a pan over medium heat. Add the garlic to the pan and saute until golden brown.
  3. Wash the baby spinach and make sure you pat it dry. If it is wet or there is any water it will splatter with you add it to the pan!
  4. Add the spinach to the pan and lower the heat. The spinach will wilt down as it cooks. Stir gently as it wilts.
  5. Once all the spinach has wilted down turn off the heat and reserve.
  6. Place your focaccia bread or already prepared flatbread on the baking sheet. Brush the remaining tablespoon of olive oil onto the top of the bread.
  7. Place the sauteed spinach over the top of the flatbread as evenly as possible.
  8. Then break up the buratta and dot pieces over the top of the spinach. Then sprinkle the olives on over the top. Season with salt and pepper to taste
  9. Place the bread in the oven for about 12 minutes. Remove and serve!
