April is National Grilled Cheese month! Wahooo! I was able to visit Baltimore and Connecticut to share my Good Morning Grilled Cheese and Roasted Tomato Soup with Grilled Cheese Croutons. This recipe is obviously a take on stuffed french toast. The mascarpone cheese with the maple syrup really takes this to next level. I believe this will set you up for your best day yet :)!
In a small bowl combine the mascarpone cheese and maple syrup.
In a large frying pan or skillet, melt butter over medium heat. Whisk together cinnamon, eggs, and vanilla and pour into a shallow bowl.
Dip bread in egg mixture, let the excess drip off. Fry slices until golden brown, then flip to cook the other side. Set aside
Let the bread cool a bit before spreading the mascarpone cheese mixture. Once cooled, use the back of the spoon to coat one piece of bread with the mascarpone mixture, then top with mixed berries. Then place another piece of bread on top and serve.
