No Bake Peanut Butter Date Energy Bites

Brian has been bugging me to make some from peanut butter protein bites forever. He had something similar at nearby juice shop one day. From then on he could not get them out of his mind. I knew I would have to come up with not only the right flavor but consistency as well. After doing some research I decided on a date and peanut butter mixture to bind the bites. I came across Maca Honeycomb Cereal in whole foods. I knew that would be the perfect ingredient to lend some crunch to the bites. I also grabbed some chia and flax seeds for an added healthy boost. I am so proud that no white sugar is in this recipe. Coconut, maple syrup, and some vanilla extract help flavor this recipe. You can sub out the maple syrup for an agave nectar if you would like. It may alter the taste but it will still be good!

Pop these balls in the freezer for a little bit then an air tight container in the fridge. They should keep for about 2 weeks. I even ended up sharing a couple with my sister Katie who is now hooked. They are a great on the go snack. Also great for before or after a workout. For someone like me who is pregnant this was a great way to combat some of those times when I wanted a piece of chocolate. Well, sometimes!!!

  1. In a food processor using the S blade, pulse together the dry ingredients: chia seeds, flax seeds, maca cereal, and cashews. Pulse together for about 20 seconds, just until the mixture is combined into grainy powder, not dust!

  2. Add in your peanut butter and dates. Pulse again for 20 seconds, then add in the coconut oil, maple syrup, and vanilla extract. Pulse together again until mixture is well combined.

  3. Roll the "dough" into 1 inch size balls and place on a baking sheet. Place them in the freezer for 20 minutes. Then remove them. Store them in an airtight container in the fridge.
