This egg bake has English muffins that become packed with flavor from the cherry tomatoes, kalamata olives, and fresh oregano. Of course baking in some cheesy goodness makes this dish even better. The colors of the dish are vibrant as well. The best part is you can make this the night before, let it set in the fridge ready to bake the next day.

  1. Spray a 9x13 baking pan with cooking spray. Then line the bottom of the dish with the English muffin slices. You may have to cut some in half.
  2. Sprinkle half of the olives, tomatoes, and cheese over the layer of bread.
  3. Add the second later of bread on top and repeat adding the chopped oregano to the top.
  4. In a medium size bowl whisk together the eggs, milk, Greek yogurt, salt, pepper, and onion powder.
  5. Pour the mixture evenly over the pan of English muffins. Cover and refrigerate overnight.
  6. Uncover the pan and let it come to room temperature. Meanwhile, preheat the oven to 350 degrees. Bake in the oven for about 50-55 minutes, a little longer if you want the top to crisp up.
