Cook rice according to package directions. Then cool down and set aside. If you have time putting the rice in the refrigerator for any amount of time would be great. For fried rice, cold old rice actually works best!
In a large sauté pan add the crushed pineapple, green chili, and cinnamon. Sauté until the liquid from the pineapple evaporates, about 5 minutes.
Then add the sesame oil, carrots, and garlic. Continue to sauté on a medium low heat.
Meanwhile in a small bowl add the chicken, soy sauce, ginger, and garlic powder. Mix together.
Add the chicken to the sauté pan. Mix with the pineapple and warm through about 3 minutes. Then add your rice to the pan on a medium high heat.
Add the lime juice and continue to mix through for another 3 minutes.
Add the fresh cilantro, toss, and serve warm!
You may also use brown rice, jasmine rice, an instant rice, or even old takeout rice for this recipe if you so desire.
