es to school very close by and it has been a blessing in disguise. This is a special time for us to spend one on one. We are in two totally different life stages. She keeps from being too “Jcrew” and I keep her in line! I always try to make something interesting for her and make enough for her to take some with her. Katie loves butternut squash! So she was the perfect taste tester for the roasted butternut squash and green apples.
In a bowl whisk together the maple syrup and olive oil.
Place the butternut squash and apple on a baking sheet. Season the apples and squash with the salt, pepper, chipotle powder, and brown sugar. Then pour the maple syrup and olive oil mixture over the squash and apples. Make sure you toss it all together well to try and evenly coat the squash and apples.
Roast for 20 minutes then pull the baking sheet out of the oven and toss again. Place it back in the oven for another 15-20 minutes. You want the squash to be tender.
