I found the product at my local Walmart in the celebration aisle, along with other ingredient inspiration. I decided on using strawberries and roasting them Then mixing them into The Curious Creamery Ice Cream Cake Mix using the Sweet Cream flavor. To top it all off I planned on make a chocolate hazelnut icing. This is not your average ice cream cake!

At first I was intimidated. I pictured myself combating a melting mess that wouldn’t easily go into a form of a cake.  After going through the process once I was amazed and soon became addicted to making not just the cake but my own ice cream in general. It was so simple I was even able to have my 2 year-old niece help! Just add the Curious Creamery ice cream mix to heavy cream and milk then mix! No machine needed, I just used hand mixer. Then add in your “mix-in” ingredients. Mine were the strawberries. The other great part is the mix itself is gluten free, no high fructose corn syrup or preservatives.

  1. Preheat your oven to 350 degrees. Prepare a baking sheet with parchment paper.
  2. Put the sliced strawberries on a baking sheet and sprinkle the sugar over the top along with the vanilla extract. Toss the strawberries to coat.
  3. Place the strawberries in the oven for about 25 - 30 minutes.
  4. Meanwhile prepare the ice cream cake according to the Curious Creamery step by step instructions.

  5. In a large mixing bowl combine the Curious Creamery ice cream cake mix with the milk, heavy cream, and sugar. Using a mixer or electric hand mixer, mix the contents of the bowl until it becomes creamy and wavy, about 5 minutes.

  6. Then add in the roasted strawberries and whisk again on a low speed.
  7. Pour the mixture into a 9 inch springform cake pan. Then cover the top with saran wrap and put into the freezer for 4 to 6 hours.
Chocolate Hazelnut Icing
  1. Beat softened butter on medium speed with an electric or stand mixer. Beat for 2-3 minutes until smooth and creamy. Add 2 cups of powdered sugar and continue to beat on medium speed. The mixture will be fairly thick. Add the Nutella and continue to beat on medium speed.

  3. Add 3 Tablespoons of heavy cream and the vanilla extract. If the frosting is too thick, add more heavy cream.
Assembly
  1. Once the ice cream cake has been in the freezer for the 4-6 hours. Check to see that it is set
  2. Remove the ice cream cake from the springform pan. If you are struggling to release cake try a warm towel around the pan to loosen it up.
  3. Spread the icing over the top of the cake. You will have enough to cover the whole cake if you desire. I covered the top and then used some whole strawberries to decorate the top!
