Even in the summer sometimes we have slow rainy days. These slow cooker Turkey Sloppy Joe’s are the perfect dinner for those indoor days. Some people save the slow cooker for the colder months. I use my slow cooker all year round. Especially when I want to keep working or cleaning all day. These Sloppy Joe’s require a little bit a prep work, then they are good to sit and simmer!
In a large saute pan heat the olive oil over medium heat. Add the turkey meat and let it cook for about 7 minutes. As it cooks periodically use the edge of your spatula or wooden spoon to break up the turkey meat into smaller pieces or chunks.
Meanwhile whisk together the ketchup,water, mustard, brown sugar, worcestershire sauce, apple cider vinegar, chipotle chili powder, salt, and pepper in the slow cooker or crockpot.
After the meat is done cooking add it to the slow cooker. In the same saute pan over medium heat add the garlic (add a little more olive oil to the pan if you need to) and let it saute for a minute. Then add in your onions and peppers. Saute until onions become translucent. Then add in the balsamic vinegar and let everything summer together for about 3 minutes more.
Add the garlic, peppers and onions to the crockpot. Give the contents of the crockpot a good stir. Cover and cook on low for 3 hours.
Serve over potato buns with a slice of cheese or over a baked potato!
