Summer BBQ Menu Staples

Summer is the best time for impromptu gatherings, as well as planned. The days last longer, everyone is a little more relaxed, they linger a little bit longer. That is why I try to keep certain things in my fridge and pantry all summer long. That way I am never at a loss when people stop by.

Some of my favorite dishes that comes together in no time are fresh honeydew with prosciutto and stone fruit caprese. Slices of salty prosciutto paired with sweet honeydew slices are always a crowd favorite. f cherries are in season, I love to add them along with grilled peaches to a platter with buratta. Drizzle some balsamic glaze over the platter for the finishing touch. I love to dress the vegetables with a lemon caper vinaigrette, I have included the recipe below.


When shopping for the fruits and vegetables at Acme Markets, I always swing by their meat counter. I like to have ground meat on hand to make my burgers, fresh. My secret is to grate butter into the patty mix! However, pork ribs are my go to choice for my main dish. The method I use has NEVER failed me. I have created the perfect spice rub that I make sure covers ever inch of the ribs. Then wrap it tightly in foil. I let them sit overnight in the fridge. After they come to room temperature I let them cook (still covered) low and slow in the oven at 300 degrees for two hours. Then I finish them on the grill, even with them already falling off the bone! As they cook on the grill for a couple of minutes, I baste them with the bbq sauce. I am not a pitmaster by any means, but I have been told many times they are the best ribs EVER!

Lemon Caper Vinaigrette recipe:
1/4 cup olive oil
1 tbsp red wine vinegar
1/2 tbsp lemon juice
1 tsp capers, chopped
1/2tsp grated garlic
Salt and pepper to taste


Whisk all ingredients together and drizzle over the grilled vegetables!
