Avocado Chicken Salad

Once in awhile, after work, I go food shopping and I am running low on steam. So even I will grab the rotisserie chicken to save myself. One of the best parts of a rotisserie chicken is the leftovers can be made into something new! Since we have been on an avocado kick lately I decided to try out using that instead of mayo in a chicken salad. Lets say if you like guacamole you will love this easy take on chicken salad!

Avocado Chicken Salad


ingredients

  • 2 1/2 c chicken, shredded/chopped (I used rotisserie chicken)

  • 1 avocado, peeled, pitted, and mashed

  • juice from 1/2 lime

  • 1/3 c red onion, chopped (more or less depending on your taste)

  • 1 tsp red wine vinegar (really just a splash)

  • 1 palm full cilantro, chopped

  • 1 tsp cayenne pepper

  • salt

  • pepper

instructions

  1. In a medium size bowl mash an avocado.

  2. Then add in the red onion, lime, red wine vinegar, cayenne pepper, salt, and pepper. Mix this into the avocado.

  3. Add the chicken to this mixture and fold in. Along with the cilantro. Taste and adjust the seasonings as you feel necessary.
