Cherry, Arugula, Goat Cheese, Veetee Whole Grain Rice and Quinoa


This salad looks really elegant but is actually super easy! The brown rice and quinoa mixture from Veetee Rice is a healthy base. The addition of color from the cherries and arugula make this salad a pretty addition to your table for those summer nights. Not to mention, it is super easy to make! The Veetee Rice is super easy to just heat up, 2 minutes in the microwave or saute pan. No one wants to wait 20 minutes over a stove in the summer! ingredients

  • 2 9oz Vestee Whole Grain Brown Rice, cooked according to package directions

  • 1 1/2 c arugula leaves, packed

  • 1 c cherries, pitted and halved

  • 1 tsp balsamic vinegar

  • 1 Tbsp sherry vinegar

  • 1/4 tsp sugar

  • 3 Tbsp olive oil

  • 1 tsp salt, add more to taste

  • 1 tsp pepper, add more to taste

  • 1/2 c goat cheese

  • 1 Tbsp fresh tarragon, chopped

instructions

  1. Combine cherries and tarragon in a large bowl

  2. Cook the rice according to the package directions. Then add the warm rice to the bowl with the cherries.

  3. Add the arugula to bowl and gently fold in allowing the heat from the rice to wilt the arugula.

  4. In a small bowl whisk together the vinegars, sugar, salt, and pepper. Pour the dressing over the contents in the large bowl and mix gently to combine.

  5. Transfer the contents of the bowl to a serving platter or bowl if desired. Then sprinkle the goat cheese over the top and serve.
