Chocolate Coconut Pancakes


Yesterday was Pancake Day! To celebrate I made chocolate coconut pancakes with a simple strawberry sauce. I love making my family pancakes in the morning. It such a comforting smell to wake up to, as is coffee brewing. My niece likes pancakes with raspberries and my husband loves them loaded with blueberries. I used Krusteaz Buttermilk Pancake Mix along with some cocoa powder and coconut water to create the pancakes. They came out nice and thick with the slightest hint of coconut. The strawberry sauce was super simple to make and a great pairing. I used a T-Fal Pan to help make the perfect pancakes.  The non-stick surface made it easy for me to use less butter and oil in the pan.  I was trying to hard to achieve perfect pancake circles! In the end I had quite an impressive stack!

Chocolate Coconut Pancakes

Quick and easy chocolate coconut pancakes are a great breakfast treats. The pancakes have a light coconut undertone with rich chocolate goodness.

ingredients

  • 1 1/2 c krusteaz buttermilk pancake mix

  • 1/2 c cocoa powder

  • 1 1/3 c coconut water

  • 1/2 c shredded coconut

instructions

  1. Heat a large non stick pan or griddle over medium high heat. Grease the pan slightly with a small amount of preferred cooking spray or butter.

  2. In a large bowl mix together the pancake mix, cocoa powder and coconut water. The batter may be slightly lumpy and that is okay! Let the mix stand for about 2 minutes.

  3. Pour about 1/4 cups worth of pancake mix onto the pan. Let the pancakes cook until you see bubbles or what appears to be holes in the pancake. Then you know it is ready to be flipped. About 1 minutes on each side.

  4. Garnish with shredded coconut when serving!
