One rainy quaratine afternoon we decided to make all things oats. Since we were going to be in the kitchen together we decided to let the video camera run. We made no bake peanut butter chocolate energy balls, Brian’s favorite. Then a chewy granola with toasted coconut, oats, and raisins. These are great recipes to make with your little ones in the kitchen!




Simple Coconut and Raisin Granola

ingredients

  • 2 cups oats

  • 3/4 cup unsweetened coconut flakes

  • 1/2 cup walnuts, chopped fine (not until dust!)

  • 2 tbsp ground flaxseed

  • 1/2 cup brown sugar

  • 1/2 cup honey

  • 2 tbsp coconut oil

  • 1 cup golden raisins (or dried fruit of choice)

instructions

  1. Preheat the oven to 400 degrees. prepare a baking sheet with parchment paper.

  2. In a medium size bowl combine the oats, coconut flakes, walnuts and flax seed. Toss until combined. Then spread out onto the baking sheet in an even layer.

  3. Place in the oven for about 10 minutes in order to toast the oats, coconuts, and etc. After 10 minutes removed from the oven and let cool.

  4. In a medium saucepan combine the brown sugar, honey, and coconut oil over medium to low heat, stirring constantly until sugar is dissolved and mixture is smooth.

  5. Add the toasted oat mixture back to the bowl and add in the rasins. Toss to combine.

  6. Then pour the sugar and honey mixture into the bowl, toss to combine.

  7. Then add the granola mixture back to the baking sheet with the parchment paper. Pressing down with a rubber spatula into one even layer.

  8. Place back in the oven at 350 for ten more minutes. Let the mixture cool completely. Then you can cut it into bars or break it into bite size pieces. Store in an airtight container for up to two weeks.
