Cornbread Cake Pops with Robs Popcorn Topping


Cornbread Cake Pops are a fun twist on a holiday table favorite. This is a great way to dress up this humble side and get it party ready. It is the perfect combination of salty and sweet. The addition of the popcorn adds a little bit of crunch and a little something unexpected. You will never look at a cake pop the same way!

Cornbread Cake Pops

ingredients

  • 4 oz cream cheese

  • 1/2 tsp paprika

  • 1/2 tsp onion powder

  • 1/2 tsp garlic powder

  • 1 tsp kosher salt

  • 1 tbsp maple syrup

  • 1 tbsp hot sauce

  • 1/4 cup buttermilk

  • 3 cups cornbread, crumbled (can be store bought or homemade)

  • 1 1/2 cups Rob’s Popcorn

  • lollipop sticks

  • gold dust sprinkles

    Icing

  • ¼ cup melted butter

  • 1 ¼ cups confectioners’ sugar, sifted

  • 1 teaspoon vanilla

  • 2 to 2 ½ tablespoons hot water

instructions

  1. In a large bowl, beat the cream cheese, paprika, onion powder, garlic powder, maple syrup, salt, hot sauce, and buttermilk together until smooth. Crumble cornbread over cream cheese mixture and mix well. Shape into 1-in. balls. Place on parchment lined baking sheets. Freeze for at least 2 hours or until firm.

  2. Prepare the glaze: combine all ingredients in a shallow bowl, and mix until smooth.

  3. In another shallow bowl add the popcorn, and with a heavy bottomed glass, crush the popcorn a little bit. Do not mash into a dust, just break the pieces up a a bit.

  4. When the cake pops have hardened, remove from freezer, and dip each one in the glaze coating on all sides. Let excess drip off. Then dip the lollipop stick end into the glaze, then into the cake pop. Top with gold glitter dust and dredge the top of the cake pop in the popcorn, pushing the kernels into the top slightly.

  5. You want to have them dry upright. I have a styrofoam block with holes in it. Other tip: Pierce holes in an upside-down egg carton for an easy alternative. If you need a quick holder for your cake pops, check your fridge to see if you have an egg carton you can use. If you do, flip it upside-down, then push a stick through each egg dome. When you're finished, just prop the sticks in the holes! Or take an amazon box and poke holes in it!!!

  6. Coating should set within an hour in the fridge.
