Jersey Breakfast Deviled Eggs


After dying a gazillion Easter eggs what do you do with them? The mind immediately goes to egg salad or deviled eggs. Being it is brunch season deviled eggs seem to be the perfect appetizer to pop onto the table. They are easy to make and eat! There are many different recipes for deviled eggs. This one uses some mascarpone cheese to help make a creamy consistency. Taking inspiration from a taylor ham, egg, and cheese on an everything bagel. The perfect Jersey breakfast wrapped up in one bite!

ingredients

  • 1 dozen hard boiled eggs, peeled and halved

  • 1/2 cup mayo

  • 1/4 tbsp mascarpone cheese

  • 2 tbsp Parmesan cheese, grated

  • 1 tbsp rice wine vinegar (or white vinegar)

  • 1 tsp onion powder

  • 1 tsp poppy seeds

  • 1/8 tsp kosher salt

  • 1/8 tsp black pepper

  • 3 tbsp heavy cream

  • 2 pieces taylor ham, cooked until browned

  • 1/2 tbsp sesame seeds

  • ketchup

instructions

  1. Place your eggs in a pot and cover with cold water by 1 inch. Bring to a boil over medium-high heat, then cover, remove from the heat and set aside 8 to 10 minutes. Drain, cool in ice water and peel.

  2. Halve the eggs and take out the yellow yolk and place in a medium size bowl.

  3. In a large bowl whisk together the Mascarpone cheese, mayo, vinegar, and Parmesan cheese until smooth and combined.

  4. Then halve the hard boiled eggs, and gently remove the yolks. Add them to the large bowl with the mayo mixture.

  5. Season the egg yolks with the onion powder, salt, pepper, poppy seeds.

  6. Add the heavy cream and blend with a hand mixer on a low setting until smooth.

  7. Prepare the taylor ham by placing it in a frying pan on low until both sides are browned. About 3 minutes per side depending upon how crispy you like it. Remove from pan and let it cool before working with it.

  8. Cut the taylor ham into smaller pieces. I cut them into little triangle shapes.

  9. Once the egg yolk mixture is smooth spoon about a tablespoon of the egg back into the cavity where the yolk once was. You can also use a pastry piping bag.

  10. Once the eggs are re-filled place a piece of tavlor ham on each.

  11. Garnish with a spot of ketchup if desires and sesame seeds.
