Fennel and Orange Salad
Every new year many people start with resolutions. It is a time to reset and we set our minds to new routines. Keeping ourselves healthy is a must. It can be hard at times especially when you live close to places like Ruts Hut and love eating 3 “Rippers” at time. Okay, I lied add a cheeseburger dipped to that! In any case when you love to eat EVERYTHING you have to keep balance in mind. Don’t get discouraged along the way. To keep yourself inspired why not get your own personal cheerleader? So go ahead eat those “Rippers” but make sure you go for a run and eat this fennel salad the next day!

Fennel and Orange Salad
ingredients
1/2 red onion, sliced thin
1 fennel bulb, sliced thin with stalks removed
1 orange, remove the pith, and then slice the orange
1 Tbsp lemon juice
3 Tbsp olive oil
1 1/2 Tbsp red wine vinegar
kosher salt
fresh cracked pepper
1 Tbsp sugar
instructions
Peel the orange and carefully cut away as much of the pith as you can. The pith is the white skin that remains on the orange after you peel it. Go around the orange with your knife carefully cutting away pieces of it. As much as you can. Then slice the orange lengthwise.
Then take your fennel bulb and cut away the long stalks. Fennel takes some muscle to slice. Then take the bulb and start the bottom slicing it as think as you can. Try to keep the circular shape.
Slice about half of a red onion. Try to do this as thin as you can. You can choose to quarter the onion and slice it into half moons if you would like.
Then make the dressing. Whisk together in a small bowl the lemon juice, olive oil, red wine vinegar, sugar, salt and pepper (to taste). Then drizzle it over the salad and serve.
