Lobster & Shrimp Pasta with a Creamy Sherry Sauce


Food shopping with your husband is very different than food shopping on your own. While you keep your meal planning and budget in mind, he is busy grabbing at everything he sees. I feel like its similar to bringing a toddler along, whining included. As much as I love lobster is not a grocery list staple for me.

As we shopped Memorial Day weekend Brian fell prey to the offerings of fancy steaks, ribs, and all of the “summer” grilling advertisements. He stumbled upon a half pound of gorgeous fresh lobster meat and he was hooked. No pun intended! Seeing how excited he was about it, I allowed it. Seems that is not good practice for when we have kids but I won’t tell if you don’t!

Lobster and Shrimp Pasta
with Creamy Sherry Sauce


ingredients

  • 2 Tbsp butter, unsalted

  • 3 garlic cloves, minced

  • 1/2 pound lobster meat, already cooked and out of the shell

  • 1/4 pound shrimp tails, removed, deveined, and chopped in half

  • 1/4 c sherry

  • 1 1/2 c heavy cream

  • 1/4 c fresh dill, roughly chopped

  • salt

  • fresh cracked pepper

  • 1/2 lb dried spaghetti (I like to use bucatini)

instructions

  1. Fill a pot with water and bring it to a boil. Add pasta cooking based on the package directions. Add some salt to the pasta water. Usually the pasta will cook about 5-7 minutes to be al dente.

  2. In a saute pan heat 2 tbsp of butter. Meanwhile mince the 3 garlic cloves. If you can, make sure the garlic cloves are on the larger side.

  3. Once the butter is melted and starting to foam, add in the garlic. Saute the garlic until it starts to brown.

  4. Add in the sherry and let it simmer for two minutes. Then add in the shrimp and lobster meat. Let that simmer together for another 4 minutes. Then with a slotted spoon remove the shrimp and lobster meat and reserve.

  5. Lower the heat to a medium-low setting. Add the cream, then the dill, salt, and pepper to taste, stir to incorporate. Let the mixture simmer for 5-7 minutes until it thickens, covering the back of the spoon.

  6. Return the shrimp and lobster to the pan, and heat through.

  7. After the pasta is cooked, drain the pasta. Then add it the pan with the sauce and toss. After coating the pasta and letting it simmer together for about 2 minutes, serve!
