Shaved Brussels Slaw with Malt Vinegar Dressing

Brian and I love to put as much malt vinegar as we can on our fries. The best is when you are on the boardwalk with a freshly squeezed lemonade in one had and the fries in the other. While frying up the Old Bay Fish Bites that are on the blog inspiration struck! Pairing the crunchy brussels with the creamy vinegar dressing was a win. It made the perfect side to the fish bites. It almost made me feel like I was eating a healthier fish and chips. ALMOST!

ingredients

  • 1lb brussels sprouts, shaved

  • 1 cup mayonnaise

  • 1/4 cup malt vinegar

  • 1 tsp sugar

  • kosher salt

  • pepper

  • lemon

instructions

  1. If you aren’t buying already pre-package shaved brussels the easiest way to prepare them is using a food processor. Fit the food processor with a large slicing disk then feed the brussels through the tube until they are all sliced. Then add to a large bowl and toss with a squeeze of lemon juice.

  2. In a small bowl whisk together mayo, malt vinegar, salt, pepper sugar.

  3. Pour over the brussels and toss to coat. Let the brussels slaw sit for 15 minutes before serving.
