Pulled Pork Layer Dip


I will be honest, I do not care about the games. I am there for all of the food. It could be tailgating, bar food, or home viewing, the snacks are where it’s at! There are your appetizers and main dishes just like any other gathering. However, it seems each dish is cheesier, and creamier than the last. Also, sandwiches galore are acceptable. I decided to marry together two of my favorite game day recipes. The classic pulled pork sandwich and the ever addicting buffalo chicken dip. This dip will definitely dominate your game day gathering. What is even better, you can use the leftover pulled pork for tacos later in the week!

ingredients

  • 1 1/4 cup pulled pork

  • 8 oz cream cheese, softened

  • 1 cup BBQ sauce

  • 1/2 cup mayo

  • 2 cups cheddar cheese, shredded

coleslaw and cornbread topping

  • 1 1/4 cup shredded cabbage, coleslaw mix

  • 2 tbsp white vinegar

  • 1 tsp granulated sugar

  • 1/2 tsp pepper

  • 1/2 tsp kosher salt

  • 1/2 cup of cornbread chopped into cubes

  • 1 tbsp unsalted butter

instructions

  1. Preheat the oven to 350 degrees

  2. Spread the cream cheese on the bottom of a 1 quart baking dish. Using a rubber spatula seemed to work best.

  3. Layer with pulled pork over the top. Make sure the pulled pork is chopped into smaller pieces. Makes it easier for dipping later!

  4. In a small bowl whisk together the bbq sauce and mayo. Then our over the pulled pork. Sprinkle cheddar cheese over top. Put it in the oven for 20 minutes.

Coleslaw, Cornbread, and Assembly

  1. While the dip is baking, prepapre the coleslaw and cornbread.

  2. In a medium size bowl whisk together vinegar, sugar, salt, and pepper. Fold in the coleslaw and set aside.

  3. In a medium saute pan melt butter over medium heat. Add the cornbread cubes gently moving them around the pan as they brown. Once the cubes have started to brown remove from pan and set aside

  4. Once the dip comes out of the oven top with coleslaw and sprinkle cornbread pieces on top.

  5. Serve with pita or tortilla chips!
