Ricotta and Mascarpone Whip with Berries

ingredients

  • 1 cup whole milk ricotta

  • 1/3 cup mascarpone cheese

  • 1/4 cup heavy cream

  • 1/2 tbsp lemon juice

  • 2 tsp vanilla extract

  • 1 tsp cinnamon

  • 3/4 cup confectioners sugar

instructions

  1. In a large mixing bowl add the ricotta, mascarpone, heavy cream, lemon juice, cinnamon, and vanilla. With a hand mixer, mix on medium to low speed for 2 minutes.

  2. Then add in about half of your confectioners sugar, mix once again with the hand mixer for a minute, then add in the rest of the sugar. Mix until all is well combined and smooth.

  3. Top mixed berries with mixture, or spoon into a piping bag and pipe over berries. Is also good over pound cake, or a brioche toast!

RECIPE NOTES: As you mix in each stage, make sure you are wiping down the sides of the bowl incorporating ALL the ingredients. Can be made ahead of time and put in the fridge.
