Roasted Broccoli with Miso


When I roast any kind of vegetable my go to is always salt, pepper, olive oil, and garlic. It is a combination that really is fail proof! Sometimes I will splash in some white wine or some rosemary depending upon what it is I am roasting.

I was craving something a little bit different and surveyed my fridge and came upon some white miso which I used for another dish. So I decided to take inspiration from the miso and this roasted broccoli dish took form.

I used a mixed seasoning you may not be familiar with called, Nori Furikake seasoning. I stumbled upon this while in Hawaii and as soon I got back snagged a bottle at whole foods. It is a mix of sesame seeds, dried seaweed flakes, salt and sugar. It is also great sprinkled over rice. I included a link below in case you can’t find it in your grocery store!

Roasted Broccoli with Miso


ingredients

  • 1 head broccoli, cut into florets

  • 2 Tbsp shallots, chopped

  • 1/4 c sesame oil

  • 1 Tbsp white miso

  • 1/2 tsp soy sauce, low sodium

  • 1 Tbsp nori furikake seasoning

instructions

  1. Preheat the oven to 425 degrees.

  2. In a small bowl whisk together the sesame oil, shallots, white miso and soy sauce.

  3. Place the broccoli on a baking pan with sides and then pur over the contents of the small bowl. Then sprinkle the nori seasoning over the broccoli. Toss the broccoli on the baking sheet and make sure all of it is coated.

  4. Put in the oven for about 12 minutes. You want the broccoli to begin to brown but not burn!
