Sauteed Spinach with Feta


Spinach is my quick go to for a green side dish. It is super good for you and a weeknight winner. Once you can add in a bunch of different things with sauteed spinach. You can change the type of cheese you use or throw in some chickpeas the sky is the limit! Maybe that is being dramatic but I think  you get my point.

Sauteed Spinach with Feta

ingredients

  • 1 1/2 lbs baby spinach leaves, about two 12 oz bags, washed and drained

  • 2 Tbsp olive oil

  • 2 Tbsp garlic, chopped

  • 2 tsp kosher salt

  • 1 tsp black pepper

  • lemon, just a squeeze of one half

  • feta cheese, crumbled

instructions

  1. Rinse the spinach in cold water. Use a salad spinner if you can. If not, take a paper towel and squeeze the leaves.

  2. In a large saute pan, use medium heat to warm up the olive oil. Add the garlic and let it heat for about a minute.

  3. Add all the spinach, it will cook down rather quickly so don't be afraid! Then add the salt and pepper mixing the leaves around to coat with olive and garlic.

  4. Cook the spinach for another minute moving around with a wooden spoon. Add the feta cheese over the top and then cover the pan for about two minutes.

  5. Transfer the spinach to a plate with a slotted spoon. Then squeeze a half of a lemon over top and serve!
