Slow Cooker Turkey Sloppy Joe Sandwiches


Even in the summer sometimes we have slow rainy days. These slow cooker Turkey Sloppy Joe’s are the perfect dinner for those indoor days. Some people save the slow cooker for the colder months. I use my slow cooker all year round. Especially when I want to keep working or cleaning all day. These Sloppy Joe’s require a little bit a prep work, then they are good to sit and simmer!

Slow Cooker Turkey Sloppy Joe Sandwiches

This version of sloppy joe's includes a touch of balsamic vinegar and dijon mustard to make this sloppy joe very flavorful!


ingredients

  • 2 lbs ground turkey meat

  • 1 medium spanish onion (yellow), chopped

  • 2 garlic cloves, chopped

  • 1 Tbsp olive oil

  • 1 bell pepper, seeded and chopped (I used a green one)

  • 2 Tbsp balsamic vinegar

  • 1 c ketchup

  • 1/4 c water

  • 3 Tbsp Worcestershire sauce

  • 5 Tbsp brown sugar

  • 3 Tbsp dijon mustard

  • 1/4 c apple cider vinegar

  • 1 1/2 tsp chipotle chili powder

  • 1 tsp salt

  • 1 tsp pepper

  • 1 Tbsp cornstarch

instructions

  1. In a large saute pan heat the olive oil over medium heat. Add the turkey meat and let it cook for about 7 minutes. As it cooks periodically use the edge of your spatula or wooden spoon to break up the turkey meat into smaller pieces or chunks. After about 3 minutes add in the onion, garlic, and pepper. Saute everything together for another 3 minutes, until the meant is brown and the onions are translucent. Add balsamic vinegar to the pan and stir once more.

  2. Whisk together the ketchup, water, mustard, brown sugar, Worcestershire sauce, apple cider vinegar, chipotle chili powder, salt, and pepper in the slow cooker or crockpot.

  3. After the meat is done cooking add it to the slow cooker along with the sauce mixture.

  4. Give the contents of the crockpot a good stir. Cover and cook on low for 3 hours. After 3 hours, sprinkle the cornstarch over the crockpot and stir. Let it simmer uncovered for another 10 minutes, to allow the sauce to thicken.

  5. Serve over potato buns with a slice of cheese or over a baked potato!
