Watermelon Radish Salad with Blueberry Vinaigrette

This salad is fresh and full of flavor. The chickpeas add protein along with the crunchy watermelon radishes. Topped with a blueberry dressing.


ingredients

  • 2 watermelon radishes peeled, sliced thin on a mandolin then julienned

  • 1 apple (gala apple) peeled, sliced thin, then julienned

  • 1/4 c red onion, sliced

  • 1 can chickpeas, drained

  • fresh dill, chopped

  • kosher salt

  • pepper

blueberry vinaigrette

  • 1/2 c olive oil

  • 1 Tbsp honey

  • 1/2 c blueberries

  • 2 Tbsp apple cider vinegar

  • salt

  • pepper

instructions

  1. In a large bowl combine the radishes and apples, toss to combine. Then add the chickpeas, red onion, dill, salt, and pepper.

  2. In a food processor or blender add all the ingredients for the dressing. Pulse until smooth and liquid.

  3. Add dressing to the salad bowl and toss. If you have time place it in the refrigerator for about 30 minutes.
