Hot Pink Pumpkins & Cranberry Sauce

One of the best parts of the holiday season is sharing it with friends and family. It is the perfect time to express how thankful and appreciative you are to those in your life who matter most. For me, sharing food is my  way of saying “thank you.” When I have a house full of people enjoying each other and the food I have such a feeling of contentment. Of course, after a couple of sleepless nights, food shopping trips, and long hours in the kitchen. Let me be real here! But to me, the end result is worth it.

For this particular post I was able to join with my friend Gabbie from “Retro Ranch Renovation.” She has such a talent for not only home decor but a passion for “DIY.” There is not crafty bone in my body, I am pretty sure I always had the worst project in my kindergarten class. I can’t even cut a straight line.  I am the type of person who will try to fit a square peg in a round hole! The best kind of friends are those that compliment us. Gabbi’s table decor with my food added into the equation made for a very happy “Friendsgiving.” Check out our video and join the fun:

  1. Pour the wine and figs into a large saucepan. Bring to a boil. Then remove from heat , cover, and let the figs sit until tender, about 30 minutes. Strain mixture through a sieve into a medium heavy saucepan and reserve figs in a small bowl.
  2. Add cranberries, sugar, and zest to wine and bring to a simmer over medium heat, stirring until sugar has dissolved. Continue to simmer, uncovered, stirring occasionally, until cranberries burst and mixture is thickened slightly, 10 to 15 minutes. Remove from heat and discard orange zest strips, then stir in figs. Let cool completely.

  • these are fantastic! one of my firtvaoe flavor combinations is cranberry and orange, so i added a teaspoon or so of orange zest to the mix. i also just sprinkled the walnuts on top instead of mixing them through for the sake of my picky non-nut lovers. my kids love these in mini muffin version, though i’m partial to the bigger regular muffin .it lasts longer! :)
