Peanut Butter Greek Yogurt Parfaits with BarkTHINS

I was so happy to partner with barkTHINS and come up with a recipe using their snacking chocolate. I love my chocolate and I am always looking for a snack that isn’t going to make me regret it after I eat it. One of the best things about barkTHINS is they are non-gmo and use fair trade chocolate. Those aren’t just trendy FAQS but important ones. It is hard to find good tasting products out there that are ethical as well. I am always eager to pass the good ones on to DishItGirl friends!

I used the dark chocolate pretzel barkTHINS in this parfait recipe. After dinner I am always craving something sweet and this is a great alternative to the whole carton of ice cream! I have to say I also ate it for breakfast!

Peanut Butter Greek Yogurt Parfait with barkTHINS

ingredients

  • 1 1/2 c vanilla greek yogurt

  • 1/2 c peanut butter (I used a creamy peanut butter)

  • 1/4 c almond milk

  • 1 1/2 Tsbp honey

  • 1/2 c strawberries, chopped

  • 1 bag barkthins dark chocolate pretzel

instructions

  1. In a medium size mixing bowl add the yogurt, peanut butter, almond milk, and honey. Using a handheld electric mixer mix on a low speed until all combined. About 5 minutes.

  2. Once you are finished mixing the yogurt crush the barkthins. Empty the bark thins into a clear ziploc bag and using maybe the peanut butter jar, a rolling pin, or whatever you have on hand to crush the barkthins into smaller pieces to layer into the parfait. Don’t crush it into powder, just smaller pieces.

  3. In a clear tall glass or a maybe a small stemmed glass, layer 2 tablespoons of the yogurt mixture, then about a tablespoon and a half of the crushed barkthins. Repeat the process. Top the glass(es) with the chopped strawberries and enjoy!
