Berries with Brown Sugar & Mint Simple Syrup


 
 

We are just coming out of Winter and Spring is right around the corner. Although, summer berries aren’t here yet, we are starting to feel some hope. I have a childhood friend whose mother frequently served strawberries with brown sugar. I always loved the combination and to me it was unique to Aunt Carlene’s house in the summer. The best kind of food is those that are attached to good memories! So I thought to myself, instead of sprinkling sugar all over the berries maybe there is a another way. That is when I decided to see if brown sugar could be made into a simple syrup. The result was wonderful, especially with the addition of the mint.



I recently used this recipe to make the cutest tarts with a maple and orange Mascarpone filling. They are perfect for an Easter brunch or any spring occasion. The best part is you can pick up the pre-made pound cake shells in most grocery stores. Also, the simply syrup can be made ahead and stored in an air-tight container for up to a week.



Simple syrups are so versatile. You can use them in coffee, to brigthen up an ice tea or lemonade. They are also great to use in cocktails or mocktails. I also add 2 teaspoons or so to heavy cream, making a flavored whipped cream. Having a simple syrup recipe in your back pocket can take an ordinary recipe and turn it into something special!

 Berries with Brown Sugar & Mint Simple Syrup


ingredients

  • 6 large strawberries, sliced or chopped

  • 1/2 pint blueberries

BROWN SUGAR & MINT SIMPLE SYRUP

  • 1 c water

  • 1 c light brown sugar

  • 1 sprig mint

instructions

  1. After washing the blueberries and strawberries, slice the strawberries. Then combine them in a medium sized bowl.

  2. Meanwhile in a saucepan, over medium heat, boil the sugar, sprig of mint, and water until the sugar dissolves.

  3. Let the mixture simmer for about 7 minutes. Then turn off the heat, take the sprig of mint out, and let the syrup cool completely before using it.

  4. Take about 3 Tablespoons of the syrup and pour it over the berries and mix. Let the the mixtures stand for 15 minutes and serve. You may add more syrup after tasting it if you want extra sweetness!
