English Muffin Egg Bake Kalamata Olive, Cherry Tomato

Mother’s Day is right around the corner. Brunch season is in full swing and so are family gatherings. Whether you have people visiting or you are preparing a spread you need this easy overnight egg bake with kalamata olives, sweet cherry tomatoes, and oregano. This egg bake has English muffins that become packed with flavor from the cherry tomatoes, kalamata olives, and fresh oregano. Of course baking in some cheesy goodness makes this dish even better. The colors of the dish are vibrant as well. The best part is you can make this the night before, let it set in the fridge ready to bake the next day.

English Muffin Egg Bake with Kalamata Olives and Cherry Tomatoes

This egg bake is an easy make ahead breakfast dish packed with flavor. Using kalamata olives, cherry tomatoes, fresh oregano, and English muffins.


ingredients

  •  6 large eggs

  • 14-15 slices English muffin bread

  • 1/2 c cherry tomatoes, halved

  • 1/2 c kalamata olives (pitted, halved or chopped)

  • 1 c shredded cheese (I used a parmesan, asiago, mozzarella blend)

  • 1/2 c Greek yogurt

  • 2 c whole milk

  • 1/2 tsp salt

  • 1/2 tsp black pepper

  • 1 tsp onion powder

  • 1/2 tbsp fresh oregano, chopped

instructions

  1. Spray a 9x13 baking pan with cooking spray. Then line the bottom of the dish with the English muffin slices. You may have to cut some in half.

  2. Sprinkle half of the olives, tomatoes, and cheese over the layer of bread.

  3. Add the second layer of bread on top and repeat.

  4. In a medium size bowl whisk together the eggs, milk, Greek yogurt, salt, pepper, and onion powder.

  5. Pour the mixture evenly over the pan of English muffins. Cover and refrigerate overnight.

  6. Uncover the pan and let it come to room temperature. Meanwhile, preheat the oven to 350 degrees.

  7. Sprinkle oregano over the top. Bake in the oven for about 50-55 minutes, a little longer if you want the top to crisp up.
