Pineapple Chicken Fried Rice with Cilantro

Need a quick side for your Taco Tuesday? Look no further than Pineapple, Chicken, & Cilantro Fried Rice, featuring canned pineapple and canned chicken. Partnering with Cans Get You Cooking motivated me to a quick “cantry” dive to come up with this delicious side dish packed with protein, veggies, and incredible flavors! It is amazing what you can come with when you have the pantry stocked with good ingredients! Not to mention that cooking with canned foods helps cut down prep time, so I get to spend more time enjoying dinner than cooking it!

Pineapple Chicken Fried Rice with Cilantro

Easy pineapple, chicken, and cilantro fried rice. Perfect lunch or side for your Taco Tuesday!


ingredients

  • 1 c white basmati rice, cooked according to package directions, cooled

  • 1/2 c canned crushed pineapple

  • 1/2 Tbsp canned green chili, chopped

  • 1/8 tsp cinnamon

  • 1/2 Tbsp sesame oil

  • 1 can sliced carrots, drained and chopped

  • 1 Tbsp garlic, chopped

  • 4.5 oz can chunked chicken breast, drained

  • 4 tsp soy sauce

  • 1/2 tsp ginger

  • 1/2 tsp garlic powder

  • 1/2 lime, juiced

  • 1 Tbsp fresh cilantro, chopped

instructions

  1. Cook rice according to package directions. Then cool down and set aside. If you have time putting the rice in the refrigerator for any amount of time would be great. For fried rice, cold old rice actually works best!

  2. In a large sauté pan add the crushed pineapple, green chili, and cinnamon. Sauté until the liquid from the pineapple evaporates, about 5 minutes.

  3. Then add the sesame oil, carrots, and garlic. Continue to sauté on a medium low heat.

  4. Meanwhile in a small bowl add the chicken, soy sauce, ginger, and garlic powder. Mix together.

  5. Add the chicken to the sauté pan. Mix with the pineapple and warm through about 3 minutes. Then add your rice to the pan on a medium high heat.

  6. Add the lime juice and continue to mix through for another 3 minutes.

  7. Add the fresh cilantro, toss, and serve warm!

RECIPE NOTES: You may also use brown rice, jasmine rice, an instant rice, or even old takeout rice for this recipe if you so desire.
