This Pina Colada inspired Chia Seed Pudding is part of my Dishspiration series on Instagram. This pudding gives me a little sunshine on these cold winter mornings. The pineapple tossed with the brown sugar gives this breakfast treat something a little special. It is also a great midday snack. I love the texture of the chia seeds and knowing it has a lot of health benefits. Being that is a make-head type of dish it helps me make sure I am doing something little for myself each day. There are plenty of mornings and days where I rush around without feeding myself. Such a bad habit to get into. This chia seed pudding is satisfying and delicious. The full recipe is below, along with a little bit of encouragement!

Recently, in a bible study group I am part of the idea of self-care came up. We all know this makes me squirm in my seat. But I realize its because I am uncomfortable with asking myself the question, what makes me happy? What makes me calm? Because it is tied to guilt or I see that I tie to something achievement based. For a long time I thought that is just who I am or it is a problem I need to rectify. I would get so caught up in not knowing the answer or getting angry that I didn’t know what was fun anymore, that I would rest in that. Or rather, fester I should say. Then start ruminating about how I never have any fun….just another lie.

 

After that Bible study I started to notice things, and wouldn’t you know it they are small. I walked into the grocery store and realized that buying a small spray of the flowers on sale made me happy. The random eggplant parm dinner I made on Friday night with a glass of wine while listening to Dean Martin, did make me smile to myself.

 

So no maybe jetting off on a holiday every other month isn’t in the cards, and neither are weekly facials. Maybe date night every week isn’t our jam. But on the other hand maybe I really do need to try to go out with Brian once a month. And I should save a couple of bucks for skin care instead of buying her something at Target here and there. Small goals should be made. And I mean no we aren’t going to Florida for the weekend right now because we are saving up for Disney in May, and I mean that is our real life!

I just need to stop comparing my pieces of Joy to everyone elses. Because it not only steals my joy but my ability to grow in my purpose. It has me believing not only that I lack material things but that God has not equipped me to do what he has set before me and that is even worse than me not having a pinterest perfect living room

Pineapple Coconut Chia Seed Pudding

A little bit of make ahead sunshine for your mornings! Pineapple and coconut with creamy vanilla flavored chia seed pudding is a nutritious and delicious way to start your day!

ingredients

  • chia seed pudding

  • 1 cup coconut milk

  • ½ ripe banana

  • 4 tbsp chia seeds

  • 1 tsp vanilla

  • 1 tsp maple syrup

    topping

  • ½ cup unsweetened coconut flakes

  • ¼ cup pineapple, chopped

  • 2 tsp brown sugar

instructions

  1. Blend together the coconut milk, banana, maple syrup, and vanilla extract until smooth. Add the mixture to a glass container. Then add in chia seeds and mix gently. Place in the refrigerator for at least two hours.

  2. Before serving, mix together pineapple and brown sugar in a small bowl. This gives the brown sugar and pineapple a syrupy type texture. You can also use coconut sugar here if you prefer.

  3. Top the chia seed pudding with the pineapple and coconut flakes, and enjoy!
