Root Beer Float with Chocolate Brandy Soaked Cherries

Root Beer Float’s are a bonafide classic. They bring back good memories for so many! I feel like it is one of those treats that makes you giddy with excitement. It is so simply to make yet, how often do you make yourself a Root Beer Float?

You can change up the type of soda or ice cream you use when dreaming up your “float.” However, I added some boozy cherries into the mix for the win. I didn’t miss the maraschino cherries one bit! These cherries are soaked in chocolate liqueur and brandy. Making this Root Beer Float taste laced with chocolate covered cherries. It is an easy twist to add to this classic!

Please note the cherries are for the 21+ audience and should not be consumed by those underage.

 

Root Beer Float with Chocolate Brandy Soaked Cherries

 

ingredients

  • 8-12oz of favorite brand of root beer

  • 2 scoops favorite vanilla bean ice cream

  • Cherries

    • 2 1/2 cups cherries, pitted, stems removed

    • 1 cup brandy

    • 1/4 cup creme de cacao

    • 1/2 cup water

    • 1/2 cup sugar

instructions

  1. Add the brandy, water, creme de cacao and sugar to a small saucepan and heat over medium until it comes to a simmer. The sugar should be dissolved and the heavy alcohol smell faint, about 6-7 minutes. Let the mixture cool for a minute or two.

  2. Fill two pint jars with the pitted cherries. Carefully pour the brandy syrup over the cherries until the cherries are covered with the liquid. Put lids on the jars and store in the refrigerator if not using right away,

Putting it Together

  1. In a tall glass add two scoops of vanilla ice cream, then fill the glass with the cherries making sure to leave about an inch of space to the rim of the glass.

  2. Pour the root beer over the ice cream and cherries, enjoy!


RECIPE NOTES: Pour slowly in a tall glass! It is very easy to overflow the glass!
