4th of July Crostini with Blueberry, Thyme, and Brie

4th of July is this weekend and people across America will be firing up the grill and setting off fireworks. Everyone goes into a frenzy googling “red, white, and blue” themed dishes. There are so many creative ideas out there but also only so much “blue” food. I took my favorite appetizer Cherry Tomato Bruschetta and teamed it up with two new crostini recipes to create a little patriotic love. My blue inspired one is Blueberries and Thyme with Brie cheese. The white inspired consists of juicy roasted grapes, topped with Manchego cheese and drizzled with some honey.  You may have to triple these recipes because they are addicting!

4th of July Blueberry, Thyme, and Brie Crostini

The juicy grapes with the manchego are the perfect salty and sweet bite!


ingredients

  • 1 c blueberries

  • 1 tsp sugar

  • 1 Tbsp lemon juice

  • 1 Tbsp honey

  • 1 tsp champagne vinegar

  • 1/2 Tbsp fresh thyme, chopped

  • 4-6 oz brie cheese, cut into slices

instructions

  1. In a medium saucepan combine the blueberries, sugar, lemon juice, honey, and vinegar and let it simmer on a medium or low heat until you see the blueberries start to burst. This should take about 5 minutes. Add in the chopped thyme and let it simmer for another minute longer. Then removed from the heat and let the mixture cool.

  2. Place a piece of the sliced brie cheese on top of a piece of the sliced baguette. Then spoon blueberry mixture over the top. Garnish with a little bit of thyme if so desired.
