Caramel Apple Spice Bread
Apple Spice Caramel Bread
ingredients
1 1/2 cups chopped apples
1/4 cup brown sugar
1 1/2 tsp cinnamon
1/4 tsp cardamom
1 3/4 cup flour
1 1/2 tsp baking powder
1/2 tsp baking soda
1 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp cardamom
1/2 cup unsalted butter, softened
3/4 cup sugar
2 tsp vanilla
2 large eggs
1/2 cup whole milk ( I have also used almond and it worked just as well)
4 tbsp dulce de leche
instructions
Preheat the oven to 350 degrees
In a small bowl combine the apples, brown sugar, cinnamon, and cardamom until well coated. Set aside
In a large bowl add the flour, baking powder, baking soda, cinnamon, nutmeg, and cardamom. gently whisk in order to combine
In a medium size bowl cream together the butter and sugar, with an electric mixer on low speed until fluffy.
Add in the vanilla extract, and beat in eggs one at a time, until uniform, then add in the milk and mix together for 30 seconds more.
Then add the wet ingredients to the dry ingredients, mix together with a rubber tip spatula. Reserve 1/3 cup of the apples. Then add in the remaining apples to the mixture, folding them in until the mixture is well combined and uniform.
Prepare a loaf pan by coating well with baking spray. Add about one half of the mixture to the pan, gently shaking it so it reaches all sides of the pan. Add in the 1/3 cup of apples down the middle. Then pour the rest of the batter over top, gently shaking the pan to make sure it evenly distributes.
Add the 4 tablespoons of dulce de leche over top of the loaf pan. Using a toothpick, spread out the dulce de leche over the top of the bread by dragging it up and down the top of the loaf.
Bake in the oven for about 60 minutes or until toothpick comes out clean.
Be patient! Let it cook all the way or else it will break apart when slicing it.
