Canteloupe Chia Seed Pudding is the chia seed recipe you didn’t know you needed in your life. It is both refreshing and satisfying. It can be great breakfast item or a perfect summer snack.

Chia seeds have great nutritional value. They are a valuable source of protein and contain amino acids. It is said that they help stabilize blood sugar levels, and help you keep your energy levels up! Now who doesn’t need more of that?

Taking a juicy canteloupe and blending it with almond milk gives this chia seed pudding a unique flavor. I feel like most people wouldn’t think of turning any type of melon into a pudding like consistency. But I am so glad I did!

Canteloupe Chia Seed Pudding

Juicy and sweet canteloupe is a surprising yet, welcomed ingredient to this chia seed pudding!

 


ingredients

  • 1 cup unsweetened almond milk

  • 1 cup cantaloupe chunks

  • ½ tbsp honey

  • 2 tsp vanilla extract

  • 5 tbsp black chia seeds

instructions

 1. Give the cantaloupe chunks a good rough chop, then place them into a blender along with the almond milk, honey, and vanilla extract. Blend until smooth and well combined.

2.        Add the cantaloupe mixture to a large glass container or glass bowl, whichever you can seal with an airtight lid and store.

3.        Once you add the mixture into your preferred container, add in the chia seeds. Stir well to combine. Let sit for about 10 minutes then stir again to distribute the chia seeds.

4.        Cover and place in the refrigerator for at least two hours, preferably overnight,

5.        Add more chopped cantaloupe to the top if desired when serving.
