Oven Baked Black Cod with Olives

This Oven Baked Cod is flavorful with olives and capers, finished with fresh basil and lemon zest.

 


ingredients

  • 1 lb sablefish or cod filet

  • ¼ cup olive oil

  • 2 tbsp olive juice

  • ½ cup pitted kalamata olives

  • ½ cup pitted green olives (cerignola)

  • 1 tsp honey

  • ½ tbsp dijon mustard

  • 1 tbsp roughly chopped capers

  • 3 cups shaved brussels sprouts

  • Salt

  • Pepper

  • ½ tsp Red Pepper Flakes

  • ¼ cup chopped fresh basil

  • 2 tbsp lemon zest

instructions

  1. Preheat oven to 400 degrees

  2. In a medium size bowl add the olive oil, olive juice, olives, and honey whisk together vigorously. Then add the shredded brussels sprouts, capers, olives, salt, and pepper. Toss until well coated

  3. Drizzle some olive oil into a 9x9 glass or ceramic baking dish. Add the fish to a glass baking dish. Pour the brussels sprouts mixture over top. Make sure the top the fish is visible and brussels mixture surrounds it.

  4. Season the top of the fish filet with salt and pepper. Drizzle over top with olive oil,.

  5. Place in the oven for about 18-20 minutes.

  6. After the fish comes out of the oven add fresh basil and lemon zest mixture over top of each filet. Divide into two or three portions and serve.
