Cherry Port Glazed Chocolate Donuts
Today is national donut day and the stars have aligned. I managed to finally complete my Cherry Port Glazed Chocolate donuts. These have been on my list for at least two years and I finally got around to creating them. Although, with the baby around I did take some short cuts.
I used boxed chocolate cake mix to make the donuts. Yes, I know how terrible right? WRONG! Being a busy mom shortcuts right now are key. Making a port cherry glaze definitely elevates the chocolate cake mix. Quick fixes like this allow me to be creative in the kitchen successfully during nap time. While I love cake from scratch I have to accept that its not happening right now.
Regarding the cherry port glaze just know you need a lot of confectioners sugar. In order to make the glaze stay on the donut and not just seem into the pores it needs to be thick. Almost like the consistency of glue. Otherwise the glaze will disappear into the cake. Which I mean isn’t a tragedy, still tastes good. But, for aesthetics purposes may disappoint you!
In this post I am only giving the recipe for the glaze. Use any chocolate cake mix your heart desires and find a bake pan with donut shapes. Make your life easy but tasty!
Cherry Port Glazed Chocolate Donuts
ingredients
1 c cherries pitted
1 1/2 c port, enough to cover cherries
2 c confectioners sugar
2 Tbsp butter unsalted
instructions
In a medium saucepan, simmer the port and cherries over moderately high heat until a thick syrup forms, about 10 minutes.
Take half of the mixture once cooled and run it through a blender or food processor. Reserve leftover cherries.
Transfer blended cherries to a mixing bowl. Add butter and begin to mix with hand mixer. Add in the confectioners sugar a little at a time. Keep adding until you get a thick pasty consistency.
Once mixed spoon onto donuts with spatula. Garnish with leftover cherry and crushed vanilla wafers if desired.
