Skirt Steak with Goat Cheese Butter

ingredients

  • 1lb skirt steak

  • 1/2 cup olive oil

  • 2 cloves garlic, chopped

  • 1 1/2 tsp kosher salt

  • 1 tsp pepper

  • 1/2 tsp red pepper flakes

  • 1/4 cup lemon juice

  • 1/2 cup sliced white onion

  • 1 tbsp fresh rosemary

  • 1 tsp calabrian chili oil

Whipped Goat Cheese Butter

  • 1/2 cup butter, softened

  • 1/4 cup goat cheese

  • 3 tbsp mascarpone cheese

  • 1 tsp rosemary

  • 1 tsp kosher salt

  • 1/2 tsp black pepper

instructions

  1. Season the skirt steak with the salt and pepper.

  2. Whisk together all marinade ingredients. Pour over the steak and cover. Refrigerate for 30 minutes or up to 6 hours.

  3. Remove the steak from the refrigerator and let it come to room temperature

  4. Meanwhile, add the ingredients for the butter to a small bowl, whip together using a hand mixer or a rubber spatula. Set aside.

  5. Preheat a grill pan on medium high heat, brush with vegetable oil or olive oil.

  6. Grill over moderately high heat until well-browned outside and medium-rare within, about 3 1/2 minutes per side. Transfer to a carving board and let rest for 5 minutes. Thinly slice the steak against the grain and serve with the butter
