Crunchy Parmesan Zucchini Sticks

I am always looking for ways to get Siena to enjoy vegetables. It seems it never fails when you make something crunchy, toddlers seem to love it! I have to say as adult, it is not a terrible way to go! This breading sneaks in some flax seed with the crunchy panko. The addition of Parmesan cheese and garlic powder helps add to the flavor.

ingredients

  • 4 medium sized zucchinis, cut into sticks

  • 3 eggs, beaten

  • 1 cup panko breadcrumbs

  • 1/4 cup of ground flax seed

  • 1 tsp garlic powder

  • 1/4 tsp salt

  • 2 tbsp grated Parmesan cheese

instructions

  1. Preheat the oven to 425 degrees.

  2. n a small bowl beat the eggs. In another bowl combine the breadcrumbs, flax seed, salt, garlic powder, and Parmesan using a whisk.

  3. Spray a baking sheet with olive oil or other non-stick cooking spray.

  4. Dip zucchini sticks into eggs then into bread crumb mixture, a few at a time and shake to coat. Place the breaded zucchini in a single layer and spray more cooking spray on top. Bake at for about 20-25 minutes, or until golden brown.
