Apple Fennel Slaw
Apple and fennel slaw is the combination you didn’t know you needed this fall. Slice the fennel thin on a mandolin and cut the apple into matchsticks. Toss them together with this dressing and pile high onto the Apple Cider Chicken Sandwich for the perfect fall meal. Or make this as a salad and keep it in the fridge!
Apple Fennel Slaw
ingredients
¼ cup olive oil
1 tbsp apple cider vinegar
1 tbsp mayo
¼ tsp honey
½ tsp kosher salt
½ tsp celery salt
½ tsp black pepper
1/8 tsp ground mustard
½ tsp poppy seed
1 cup apple, shredded
1 ½ cup fennel sliced thin on a mandolin
instructions
In a medium bowl add the fennel and apples. Sprinkle with kosher salt and let sit for 15 minutes. After 15 minutes drain the fennel and apples. Give the fennel a little squeeze to release excess water. Then pat dry with a paper towel.
In the meantime, whisk together dressing ingredients.
Place the apple and fennel in a bowl, and pour dressing over. Tossing gently to coat.
