Saucey Shrimp over Garlic Toast


ingredients

garlic toast

  • 1 loaf of Italian bread or French Baugette

  • 1/2 cup of unsalted butter, softened

  • 2 tbsp garlic, minced

  • 1 tbsp parsley (fresh and chopped if you can)

saucey shrimp

  • 1 cup shrimp, deviened, tails off

  • 3 tbsp unsalted butter

  • 1/2 tbsp flour

  • 3 cloves of garlic , chopped

  • 1 tbsp chopped basil (fresh)

  • 1/2 cup white wine

  • juice of 1/2 of a lemon

  • red pepper flakes

  • 2 cups greens, such as baby spinach, or swiss chard, roughly chopped

instructions

  1. Preheat the oven to 350 degrees

  2. Mix together the softened butter, garlic,and parsley in a bowl.

  3. Slice the bread in half (lengthwise) and spread the butter mixture over each half.

  4. Place on a baking sheet and place in the oven for about 10 minutes. after 10 minutes remove pan from the oven. Sprinkle a little bit of kosher salt over the halves and place back in the oven on the highest rack.

  5. Turn on the broiler and broil for about 2-3 minutes, until the top gets brown and crispy. It can happen very fast and turn to burnt bread!

  6. Remove from oven and set aside. Place tin foil over top if you are not using it right away!

shrimp and greens

  1. In large saute pan with high sides, melt the butter over medium heat. Once the butter is melted, add the garlic, saute until fragrant, about minute. Then add in your flour, stir gently to combine. Let that saute together for another minute.

  2. Add in your basil, stir, then add in 1/2 cup of white wine, and squeeze in one half of a lemon. Whisk together and bring to a simmer. Let it simmer and reduce down for about 5 minutes. you will see the sauce start to thicken.

  3. Season with kosher salt, pepper, and red pepper flakes if desired. Add your shrimp (should not be frozen) to pan and stir gently to coat with the sauce. Let the shrimp cook until it is pink and warmed through, about 3-4 minutes.

putting it together

  1. Divide the pieces of garlic toast amongst plate. Top the garlic toast with the shrimp and sauce from the pan.

  2. Once the pan is empty you add a little bit olive oil, and place it back on the heat. Put your greens into the pan and gently toss them until they wilt. Once wilted place them on the side of each dish!
